Blueberry Banana Bread

Remember the picture of the banana bread I posted on instagram? Well I finally found the time to write down the recipe for you. Altough I used whole wheat flour, you are free to swap it for rice or buckwheat flour to make a gluten free version. Same goes for the coconut sugar. Just take agave or maple syrup instead Also if you aren’t the biggest fan of blueberries use other berries like strawberries, raspberries or whatever your heart prefers 🙂 And everyone: It is vegan!!

Ingridients
  • 3 ripe bananas
  • 250 ml plantbased milk (I used almond milk)
  • 300g whole wheat flour
  • ½ tsp vanilla bean paste
  • 30g Coconut sugar (or 50 ml syrup)
  • 1 tbsp baking powder
  • 20 ml coconut oil (melted)
  • 2-3 handful blueberries
  •  + extra macadamias & coconut flakes for topping
How you do it:
  1. Preheat the oven to 180 degrease
  2. Grease a loaf with oil or take parchment paper instead
  3. In a blender blend the bananas and the plant based milk. Pour into a bowl and leave aside for 5-10 minutes.
  4. In another bowl, mix together the flour, baking powder, vanilla bean paste, salt & sugar/syrup.
  5. Stir in the liqids to the dry ingredients before you add the blueberries
  6. Pour the batter into the tin and spread out evenly
  7. Place in the oven for about 40 minutes or until a toothpick comes out clean.
  8. Cool completely before cutting.
