ANZAC Biscuits (vegan + gf) & Hy Australia

So as you have probably already seen my friend Rosie and I did a cross culture collaboration where our ‘mission’ was to recreate a national recipe. I challenged Rosie to make a Kaiserschmarrn, an Austrian speciality which, like she put it, basically is torn pancakes. And she really nailed that recipe because it’s basically everything you need and look for in a -vegan- kaiserschmarrn. Well done Rosie!

And what was the challenge of yours truly? ANZAC Biscuits –which are quite popular in australia and new zealand & have Long been associated with the Australian and New Zealnad Army Corps (ANZAC). It’s said that the wives of abroad soldiers used to send those because the ingrdients don’t spoil easily and the biscuits kept well during naval transportation. -Challenge accepted Rosie!

Before I started to do this collaboration with Rosie I never heard of those biscuits but they quickly became THE thing in my family because they are so addictive! I had to do them three time in 4 days because they were gone so fast! Also i discovered after the 2nd batch that by adding dried fruits you can turn them into some nice breakfast Cookies. So a win win situation!

*Notes:
– swap wholewheat flour for gluten free oat flour. Feel free to use rice flour, it should work but I didn’t try it.
-swap coconut oil for vegan butter, normal butter, or use any other oil (olive, walnut, Avocado,….)

Ingredients:
  • 120g (1 Cup) wholewheat flour*
  • 120g (1 Cup) rolled oats
  • 120g (1cup) coconut flakes
  • 40g (¹⁄3 Cup) + 1tbsp coconut sugar (burk sugar also works quite good)
  • 150ml coconut oil*
  • 2 tbsp maple syrup
  • ½  tsp bicarb Soda
How you do it:
  1. Heat oven to 180*C and line one tray with baking paper
  2. Sift flour and sugar into a bowl, add the coconut flakes and oats, mix it and make a well in the center.
  3. Melt the coconut oil ina small pan over low heat and add, maple syrup and one tbsp coconut sugar. Remove from heat and add the bicarb. (do yourself a favour and watch the foam!!)
  4. Mix the coconut oil mixture to the dry ingredients and mix with a wooden spoon.
  5. Take about 1-2 tbsp of the mixture in your palms and press together. -it may be crumbly at first but while baking everything will melt into each other. If it is to crumbly simply add more of the coconut oil.
  6. Bake for roughly 20 minutes or until just browned. Cool on wire track before eating.

    “and watch the foam” – haha, yes Lara, the foam can be tricky to manage… I am so glad you liked these and it looks and sounds like they turned out beautiful! And I loved the kaiserschmarrn so thank you for that challenge. They have become a new breakfast food staple – my dad is absolutely in love 🙂
